Cucumber – coconut raita is made with simple ingredients available on every kitchen shelf, recipe is very simple and easy and anyone can make it in a jiffy.
Ingredients for cucumber – coconut raita ( 2 to 3 servings)
- 1 cup thick curd
- 1 medium size tender cucumber
- Salt according to taste
- 1/4 cup grated coconut
- 1tbsp fresh coriander stems
- 1/2 tsp grated ginger
- 1 finely chopped green chili (optional)
- 5 to 7 curry leaves
- 1 tbsp oil
- ½ tsp mustard seeds
- ½ tsp cumin seeds
- 1/8 tsp asafetida
- 1 tsp urad dal
- 1 tsp chana dal
- 5 to 6 curry leaves
- 1 whole red chili
- Finely chopped fresh coriander leaves for garnishing

Procedure to make cucumber coconut raita
- Coarsely grind grated coconut, coriander stems,ginger, green chili and curry leaves.
- Peel cucumber and cut into small pieces.
- Whisk curd, add chopped cucumber, coconut paste and salt, mix well.

- Heat oil in a tadka pan, put mustard seeds and cumin seeds, as seeds splutter put chana dal and urad dal, roast until dal turns golden now add whole red chili and curry leaves, saute for few seconds, add asafetida and pour tadka over cucumber – coconut raita.
- Raita is ready to serve.

Relish cucumber – coconut raita with vegetable briyani, pulao, steamed rice, puri, paratha, stuffed paratha, phulka or dal chawal.
