Sweet, tangy and mildly spiced home made Kesariya aam panna is a refreshing cool cool summer drink made from semi ripe mangoes, spiced with traditional spices which are available on every kitchen shelf and it is mildly infused with mint leaves and rich aroma of saffron. The recipe is very simple and easy.
Ingredients for kesariya aam panna ( 4 to 5 servings)
- 1 Semi ripe totapuri mango
- 10 to 12 fresh mint leaves
- 10 to 12 kesar threads soaked in warm water
- ½ cup jaggery / sugar
- 1 green chill
- ½” piece of ginger
- ½ tsp Black salt
- 1tsp Roasted jeera powder
- ½ tsp red chili flakes (optional)
- Rock salt according to taste

Procedure to make aam panna
- Peel mango and chop roughly.
- Place the mango pieces, green chili and ginger in a pressure cooker along with 2 cups of water.
- Cook for 2 to 3 whistles, turn off the flame and let it cool.
- Now transfer the mango pulp to a blender, put mint leaves and jaggery powder and blend it to a smooth paste.
- Now sieve the mixture, adjust the consistency by adding cold water.
- Put black salt, rock salt, roasted cumin powder and soaked saffron, stir it, and the refreshing kesariya aam panna is ready to relish.
- Pour kesariya aam panna into an attractive glass, garnish with red chili flakes and kesar.
- Serve it chilled.
