Aloo Bathua Paratha

Mixed flour of wheat, ragi, makkai and channa when kneeded with bathua makes a very nutritional dough for delicious parathas.

Ingredients to knead the dough ( for 10 to 12 parathas)

Blanched and mashed bathua — 1 cup
Wheat flour — 1cup
Ragi flour — 1/3cup
Makkai flour — 1/3cup
Channa flour — 1/3cup
Red chilli powder — 1/2tsp
Nutritional masala powder — 1 tbsp
Oil (optional) — 1 tbsp
Salt  according to taste
Desi ghee to cook parathas

Method

  • Take wheat, ragi, makkai and channa flour, add all the masalas and oil to it and mix properly.
  • Now add bathua to this mixture and mix well.
  • Add water according as required and knead the flour into a smooth dough.
  • Cover and keep aside for at least 10 minutes.

Ingredients for stuffing–( for 10 to 12 parathas-)

Medium sized boiled potatoes — 8 to 10
Chopped coriander leaves — 3 tbsp
Chopped green chilies — 2
Red chili powder — 1/2tsp
Garam masala powder — 1/4 tsp
Amchoor powder — 1/2tsp
Nutritional masala powder — 1 tbsp
Hing — 1 or 2 pinches
Salt according to taste

Method to make stuffing

  • Grate boiled potatoes, add all the ingredients to it and mix properly.

  • Divide the stuffing into equal portions (make lemon size ball)
  • Divide the dough into equal portions (little bigger than lemon size)
  • Give them a round shape and press little to flatten like patties.
  • Take one dough pattie and coat it with dry wheat flour, and roll into a small roti of 3 to 4 inches.
  • Place stuffing in the centre of the roti and cover the stuffing by lifting all the sides of the roti and seal it properly.
  • Roll again into a round roti of 5 to 6 inches.
  • Heat tava and place paratha on it. Cook the paratha by applying desi ghee on it and keep pressing with spatula until brown spots appear on both the sides of paratha.
  • Serve hot aloo bhathua ka paratha with chutney, dahi, tomato sauce or pickle.
