Hara chana aur corn ke muthiya is one of the healthiest steamed snacks. As we all know, muthiya is a popular steamed Gujarati snack. It’s steamed and then tempered in very little oil.
Steamed food is an excellent option for health-conscious people. It’s low in calories, retains valuable nutrients, vitamins, and minerals, and also maintains moisture and freshness. It requires very little oil for cooking, or we can skip oil.
This recipe is not only very simple and easy, but it’s also gluten-free and vegan.
Ingredients
- 3/4 cup jowar flour
- ½ cup gram flour
- 3/4 cup fresh hara chana (choliya)
- ½ cup corn
- 1 green chili
- 1” piece of ginger
- 1 tsp red chili powder
- 1/4 tsp turmeric powder
- 1/4 tsp carom seeds
- 1/4 tsp asafetida
- 1 tsp sugar
- 1 tbsp lemon juice
- 1/4 tsp baking powder
- 1 tbsp oil
- Salt as per taste
Ingredients for tempering
- 2 tbsp cooking oil
- ½ tsp cumin seeds
- 1 tbsp sesame seeds
- 1 tsp mustard seeds
- 1/4 tsp asafetida
- 8 to 10 curry leaves
- 4 green chilies (cut into big pieces)
- Fresh coriander leaves for garnishing
- Lemon juice as required

Procedure to make muthiya
- Without adding water, coarsely grind hara chana, sweet corn, ginger, and green chili in a blender.
- Transfer the mixture to a mixing bowl. Add jowar flour, gram flour, carom seeds, asafetida, sugar, salt, red chili powder, turmeric powder, oil, baking soda, and lemon juice.
- Mix everything well to make a soft dough. If necessary, sprinkle some water.
- Now divide the dough into 3 to 4 equal portions and shape it like a cylindrical roll.
- Heat sufficient water in the steamer.
- Grease a steamer plate with oil, keep the rolls on it, and steam for 20 minutes.

- Now check the rolls with a fork. If it comes out clean, then the rolls are ready. If dough sticks, then steam for some more time.
- Take out the rolls from the steamer and keep them aside to cool.
- Cut thick slices from the roll.
- Heat oil in a thick-bottom kadhi. Add cumin seeds, mustard seeds, and sesame seeds. Allow the seeds to crackle. Now add curry leaves and green chili and sauté for a few seconds. Sprinkle asafetida and add the sliced muthiya. Squeeze lemon juice and mix well. Switch off the flame.
- Transfer hara chana aur corn ka muthiya to a serving dish and garnish it with fresh coriander leaves.

- Serve muthiya with green chutney.
