Overripe bananas are easily turned into banana cake or panchamritham, which is a favourite naivedyam. I also make sweet appam if there are just a couple of them. But what could I do with five of them, especially since I didn’t want to bake anything? Well, why not make pancakes, I thought and that is what I ended up doing.
I used whole wheat flour with a little rava and jaggery. Actually the same ingredients as are sometimes used to make instant sweet appams, but here the major ingredient was bananas. Banana pancake recipes have more of flour and less of banana, but I added just enough flour to help the banana pulp hold its shape when poured on the tawa. Unlike the usual recipes, I didn’t add milk and baking powder, but just a bit of baking soda and some curd. It came out perfect.

Ingredients:
- Ripe bananas 5
- Whole wheat flour 5 heaped tbsps (about a cup)
- Rava 1 tbsp
- Jaggery (powdered) 2 tbsp
- Curd 1 tbsp
- Baking soda ½ tsp
- Salt a pinch
- Cardamom powder ½ tsp
- Ghee as required
Method:
- Mash the bananas to a pulp with a potato masher or by hand.
- Add the flour, rava, salt and jaggery powder along with the curd. Mix till well combined, adding a little water if needed. Cover and rest for 10 mins.
- If the mixture seems very thick, add a few spoonsful of water to get a thick batter.
- Just before making the pancakes, add the baking soda and mix well.
- Heat a non-stick tawa and add a few drops of ghee to it. Spread it on the tawa and drop a ladleful of the batter. Spread it slightly to half an inch thickness. Drizzle some ghee around the edges, cover cook for a minute till it fluffs up and the bottom turns a golden brown.
- Flip it over and cook on the other side too, with a few drops of ghee.
- Serve hot as it is, or with a dollop of butter or honey.
