Veg Grilled Sandwich

Sandwiches are everyone’s favourite and are quick to make, and are a very convenient meal option for breakfast, lunch, or dinner.

Sandwiches are versatile; you will find numerous versions, and you can stuff your favorite veggies.

Here I am sharing a very simple and easy recipe for a veg grilled sandwich. To make stuffing, take colourful veggies, Hung curd, paneer, and spices. Combine all the ingredients, and the stuffing is ready.

Ingredients for 6 sandwiches

  • 3 tbsp chopped and blanched carrots
  • 3 tbsp chopped and blanched beans
  • 3 tbsp blanched sweet corn
  • 3 tbsp crumbled paneer
  • 3 tbsp hung curd
  • 2 boiled potatoes mashed
  • 1 finely chopped tomato
  • 2 tbsp ghee
  • 1 tsp cumin seeds
  • Pinch of asafetida
  • 1 tsp grated ginger
  • 1 finely chopped green chili (optional)
  • 1/4 tsp black pepper powder
  • 1 tsp red chili flakes
  • Salt according to taste
  • Lemon juice as required
  • A handful of finely chopped fresh coriander 
  • Butter for toasting
  • Fresh sandwich bread

Procedure to make a sandwich

  • In a wok, heat ghee, put cumin seeds, as the seeds sizzle, add grated ginger, green chili, and asafetida, saute for a few seconds.
  • Now add all the veggies, hung curd, crumbled paneer, salt, pepper powder, red chili flakes, chopped coriander, squeeze lemon juice, mix well, switch off the flame.
  • Now, take two slices of bread, spread butter on both slices, stuff them with the prepared stuffing, and cover with the other bread slice.

  • Now grill the sandwich in the toaster until golden.
  • The grilled sandwich is ready.
  • Enjoy a grilled sandwich with your favourite sauce or chutney.
