With fresh vegetables galore, it’s the perfect time to make a variety of salads, some elaborate, others simple and easy. The mooli, gajar ka lachha is one such simple salad. A popular winter salad from north India, it can be made in a jiffy with minimum effort and ingredients. It is served as an accompaniment with lunch.

Equipment:

Ingredients:
- 1 cup grated radish (mooli)
- ½ cup grated carrot (gajar)
- ½ cup chopped tomato
- ½ cup pomegranate seeds (anar)
- 2 finely chopped green chillies (hari mirch)
- 1 tsp grated ginger (adrak)
- 1/4 cup fresh chopped green coriander (hara dhania)
- Salt according to taste
- Lime juice as required.
Preparation:
- wash all the vegetables and keep in a colander.
- Grate radish and tightly squeeze it.
- Grate carrot and ginger.
- Chop tomatoes, green chillies and coriander leaves.
- Shell the pomegranate and remove the pearls.
Method:
- In a bowl, combine grated radish, carrot, ginger, chopped tomatoes, green chillies, fresh coriander leaves and pomegranate seeds.
- Squeeze lime juice and mix well.
- Add salt just before serving.
- Delicious salad is ready to serve.
Serving idea:
- Serve as a side dish with lunch.
