Eggless Orange and Choco Chips Cupcakes

Equipment

  • Oven
  • The tea cup used to measure is of 125 ml.
  • Measuring spoons
  • Cupcake moulds
  • Mixing bowl
  • Wire whisk
  • Pan to make the compote

Ingredients

  • 1 teacup aata (wheat flour)
  • ½ teacup oats
  • ½ teacup fresh cream
  • ½ teacup powdered sugar
  • 1 tsp orange zest
  • ½ teacup orange juice
  • 1 tbsp chocochips
  • ¼ tsp cinnamon powder
  • ½ tsp baking powder

  • ½

    tsp baking soda

  • 1 tbsp curd
  • ¼ tsp mixed fruit essence
  • Salt one pinch

Ingredients to make Orange Compote

  • 2 oranges

    big
  • 1 tbsp butter
  • 1 tsp orange zest
  • ¼ tsp cinnamon powder
  • 3 tbsp sugar
  • Salt one pinch

Instructions

  • Combine all the dry ingredients such as wheat flour, cinnamon powder, baking powder, baking soda and salt.

  • Sieve all the dry ingredients three times so that everything combines properly.


  • In a bowl, take fresh cream and sugar, whisk it until the mixture is smooth and creamy.


  • Add ¼ teacup of orange juice. Also add mixed fruit essence, 1 tbsp curd, orange zest and oats. Whisk it until everything combines properly.

  • Now add dry ingredients and fold everything together, add orange juice as required and make the batter of dropping consistency.


  • Add choco chips to the batter and mix. (reserve few choco chips for garnishing)


  • Spoon batter into cupcake moulds. Fill each mould only ¾th and sprinkle few choco chips on the top. 


  • Once the oven is preheated, place cupcake moulds on the low rack.


  • Bake orange and choco chips cupcakes at 180° celsius for 20 minutes.


  • Check the cupcakes with a toothpick, if it comes out clean, the cupcakes are ready. If it does not come out clean, bake it for five more minutes.


  • Once done, take them out from the oven and let it cool for a few minutes.


  • Take out the cupcakes from the moulds and let them cool on the wire rack. 



Instructions to make Orange Compote

  • Rinse and peel oranges, separate the segments and peel them and discard the seeds.


  • Melt butter in a pan, add peeled orange segments, sprinkle cinnamon powder, orange zest, salt, sugar and add orange juice, mix well.


  • Cover the pan with the lid and let the oranges simmer on low flame until juice evaporates, switch off the flame. 


  • Orange compote is ready for topping on cupcakes.


How to spread compote on the cupcakes

  • Brush some orange juice on cupcakes.
  • Spread orange compote on cupcakes.


  • Delicious orange and choco chips cup cakes garnished with orange compote are ready to relish.


Notes

For Cupcakes: 

  • Grate outer peel of orange to obtain orange zest.
  • If using silicone cup moulds for baking, make sure you use silicone moulds that are of good quality and are FDA approved food grade silicone moulds.
  • Preheat the oven with the low rack in it at 180 degree celsius.

For Compote:

  • If oranges are sour, increase the quantity of sugar.
