Drumstick curry

In Hindi, drumsticks are called sahjan ki phali.

The Moringa tree, also known as the drumstick tree, is called a miracle tree because the leaves, flowers, pods, seeds, sap, roots, oil, and bark are all loaded with medicinal properties.

Drumstick pods and leaves are loaded with nutrients and antioxidants. Leaves which are known as moringa leaves are the most nutrient part of the plant; these tender leaves are the storehouse of essential nutrients.

Health benefits of drumstick leaves and drumstick pods

  • Leaves are a good source of iron, calcium, potassium, zinc, selenium, and magnesium.
  • Leaves are an incredible source of vitamins such as vitamin B complex, vitamin C, vitamin K, and beta carotene, which protect us from many chronic oxidative diseases, including diabetes, cancer, heart disease, and Alzheimer’s disease.

Here I am sharing a very simple and easy recipe for drumstick curry.

Note

  • Always take fresh, tender, and green drumsticks with a medium thickness.
  • After boiling, slit drumsticks from the center to absorb the masala properly.
  • After roasting, I have used peanuts and skin because peanuts skin is a good source of antioxidants. It also contains a high amount of bioactive and dietary fiber, promoting health and boosting immunity.

Ingredients to make curry

  • 3 drumsticks 
  • 2 medium size tomatoes (pureed)
  • 2 tbsp oil 
  • 1/4 tsp mustard seeds 
  • ½ tsp cumin seeds 
  • 1 tsp grated ginger
  • 1 green chili 
  • 1/4 tsp turmeric powder 
  • 2 pinch asafoetida 
  • ½ tsp dry mango powder 
  • 1/4 tsp garam masala powder
  • Salt according to taste 
  • Fresh coriander leaves for garnishing

Ingredients for masala

  • 1 tbsp peanut
  • 1 tsp sesame seeds
  • 1 tbsp dry coconut
  • 1 tsp poppy seeds 
  • 5 cashew nuts 
  • 3 dry red chili
  • 1 tbsp coriander seeds 
  • 1/4 tsp cumin seeds

Procedure to make masala 

  • In a wok, dry roast peanuts on medium to low flame. Transfer peanuts onto a plate.
  • Now roast sesame seeds, poppy seeds, cumin seeds, cashew nuts, and grated dry coconut.
  • Roast red chilis and coriander seeds until the spices turn aromatic.
  • Cool the mixture completely and grind it to a fine powder.
  • Now add 1/4 cup water and blend it to a smooth paste.

Procedure to make curry 

  • Wash and peel drumsticks and cut equal size pieces.
  • Boil sufficient water in a pan, and add salt.
  • Now put the drumsticks piece and cook on medium flame until they turn soft.
  • Now take out drumstick pieces from the water.
  • Keep water aside; you can use this water while making gravy.
  • In a wok, heat oil, add cumin seeds and mustard seeds, let it splutter, lower the flame.
  • Now add grated ginger, green chili, and asafoetida, and saute for a few seconds.
  • Now put turmeric powder, coriander powder, and red chili powder saute for a few seconds.
  • Now add tomato puree and saute until oil is released.
  • Now add the ground masala and cook until the oil is released.
  • Now add drumsticks and mix well; add water as required, and cook for 5 to 7 minutes on low flame.
  • Finally, add dry mango powder and garam masala powder, mix well, switch off the flame, transfer sabzi to a serving bowl, and garnish it with fresh coriander leaves.
  • Serve hot drumstick curry along with steamed rice, phulka or paratha.
