Cucumber Peanut Salad is very healthy and nutritional. Peanuts, when mixed with cucumber, add a very nice and nutty taste to this delicious salad. You can enjoy this salad any time, but especially when fasting this salad makes for a very healthy snack! Cucumber is low in calorie and has high water content that keeps the body hydrated. It is also rich in potassium, magnesium and fiber which regulates blood pressure and reduces bad cholesterol. A handful of peanuts provide the recommend level of antioxidant, minerals, vitamins and proteins. Peanuts boost memory power, fight depression, and lower the bad cholesterol while increasing the good cholesterol. Peanuts also lower the risk of heart diseases.
I am sharing a very simple recipe of cucumber and peanut salad.
Chopped Cucumber – 2 cup
Dry roasted peanuts – 1/2 cup
Black pepper powder – 1/4tsp
Green chill – 1
Lime juice – 1tbsp
Coriander leaves – 2tbsp
Sendha namak (rock salt) according to taste.
- Peel cucumber and cut into small cubes, chop green chilies
- Coarsely crush peanuts.
- In a bowl, combine cucumber, peanuts, green chili, salt, pepper powder, 1 tbsp coriander leaves and lime juice.
- Dish out and garnish with coriander leaves.
- Nice crunchy and healthy salad is ready.
