Ingredients
1teacupRajgira (amaranth) flour.
1teacupPuffed rajgira.
1teacupAata (wheat flour)
¾cupGud (jaggery) powder.
½tspBaking powder.
½tspBaking soda.
Saltone pinch
5-7tbspMilk

Instructions
Sieve wheat flour, rajgira flour, baking powder, baking soda and salt three times, so that everything combines properly.
To this mixture, add puffed rajgira and mix it well.
Take 5 tbsp warm milk in a bowl, to this add 3 tbsp butter and powdered jaggery mix it well, now combine this mixture with dry ingredients.
Now add milk as required and knead the mixture into a tight smooth dough.
Cover the dough and keep in the refrigerator for 10 minutes.
Take out the dough from refrigerator and divide it into 3 to 4 equal portions.
Grease plastic sheet or foil with oil, take one dough ball, keep it on the plastic sheet, flatten it, cover it with another plastic sheet and roll it evenly. Keep it slightly thick else edges may crack while rolling. Try to seal it with hands.
After rolling, trim the cracked sides.
Now with the help of a cookie cutter or knife, shape the biscuits as desired (repeat the process with remaining dough)
With the help of a fork put an impression on biscuits, this looks very attractive.
Grease the baking tray, arrange the biscuits in it, and leave little space in between.
Set the temperature to 180° and preheat the convection oven with the lower rack in it.
Once the oven is preheated, keep the baking tray in it and bake the biscuits for 20 minutes.
Now reduce the temperature to 150° and bake it again for 5 more minutes.
Once done, take out the baking tray and let it cool down.
After biscuits cool down completely, store them in an airtight container.
