Preparation
Clean and trim palak.
To remove mud and dirt, wash palak under running water.
Keep palak in a colander for some time, this will drain the excess water.
Finely chop palak.
Rinse and peel the potato and cut into cubes.
Chop tomatoes.
Slit or chop green chilli.
Chop ginger.
Method
On the medium flame, heat oil in a heavy bottom kadhai (wok).
Put cumin seeds, as it sizzles add green chillies and ginger and saute it for few seconds.
Sprinkle asafoetida and add chopped spinach and potato, lower the flame.
Sprinkle turmeric and salt, mix well and cover kadhai with lid.
Stir in between and let it stay until completely cooked, the excess moisture should evaporate.
Now add tomatoes, coriander powder, red chilli powder and dry mango powder and saute sabzi for one more minute.
Aloo palak ki sukhi sabzi is ready to serve.
Transfer sabzi to a serving bowl.
Serving Idea
Serve aloo palak ki sukhi sabzi with phulka, paratha, puri or dal chawal.
