🥥Easy coconut payasam/Nariyal ki kheer

There are so many festivals and vrats throughout the year, that it pays to have a host of naivedyams and fasting foods handy, so that we don’t end up making the same ones over and over again. And you know I look for the simplest of dishes that won’t go wrong even if I don’t  follow the recipe to the T and which are easy to boot! In this category of dishes falls payasam or kheer, and it goes without saying that it is a favourite of mine!

In addition to the rice kheer that is everyone’s favourite, there are any number of payasams that can be made easily using jaggery or sugar or even dates for sweetening. I had shared a version of pumpkin kheer earlier.

You can try this easy-peasy kheer for naivedyam on one of the days this Navaratri.

 

Ingredients: (4 servings)

  • Grated fresh coconut       – 1 cup tightly packed
  • Rice                                  – 1 ½ tbps soaked for an hour
  • Jaggery (powdered)         –  ½ – 3/4 cup
  • Thick coconut milk            – 2 tbsp
  • Ghee                                 – 1 tsp
  • Cashew nuts                      – 10 (broken into half)
  • Raisins (kishmish)              -10-15
  • Cardamom powder             -½ tsp
Ingredients for the payasam

 

Method:

  • Drain the water from the rice and grind it along with coconut into a fine paste. Add a little water if needed.
  • Add a cup of water and cook it in a heavy-bottomed pan on a slow flame till the rice is cooked and the mixture thickens. Stir intermittently and take care to see that it doesn’t stick to the bottom of the pan.
  • Add the jaggery and let it melt and combine with the coconut-rice mixture. Stir occasionally.
  • Once it combines well, add the milk and cardamom and mix well.
  • Switch off the flame.
  • In a small pan heat the ghee and fry the cashews and raisins. Add to the kheer and enjoy hot or cold – after offering the naivedyam, of course!.

Note:

  • You can use readymade coconut milk or use ½ cup regular milk.
  •  Add more milk to adjust the consistency.

पूरे वर्ष में बहुत सारे त्यौहार और व्रत होते हैं, ओर इस दौरन नैवेद्यम और व्रत वाले भिन्न भिन्न खाद्य पदार्थ बनाए जाते है, और आप जानते हैं कि मैं हमेशा सबसे सरल व्यंजनों की तलाश करती हूं जो बिना रेसिपी देखे भी एकदम बढिया ओर  स्वादिष्ट बने।  इस श्रेणी के व्यंजन में पायसम या खीर आती है,ओर यह मेरा पसंदीदा है!

चावल की खीर तो सभी की पसंदीदा होती है, परंतु ऐसे कई पायसम हैं जो आसानी से बन जाते हैं, ओर इसमें मिठास के लिए गुड़, चीनी या खजुर डाला जाता है। मैंने पहले कद्दू की खीर की रेसिपी साझा कि थी।

इस बार नवरात्रि के दिनों  आप नैवेद्यम के लिए यह आसान-सी खीर बना सकते हैं।

 

सामग्री: (4 सर्विंग्स)

  • 1 कप मे दबा कर भरा हु – कसा हुआ ताजा नारियल 
  • 1 tbsp चावल  एक घंटे के लिए भिगो दें
  • 1 / 2 to 3 / 4 कप गुड़ (पाउडर)
  • 2 tbsp गाढ़ा नारियल दूध 
  • 1 tsp घी 
  • 10 काजू  (आधा टूटा हुआ)
  • 10 to 15 किशमिश 
  •  1 / 2 tsp इलायची पाउडर 

बनाने का तरीका:

  • चावल से पानी निकाल लें और इसे नारियल के साथ बारीक पीस लें। जरूरत हो तो थोड़ा पानी डालें।
  • एक भारी तले वाले पैन मे एक कप पानी ओर चावल डालकर धीमी आंच पर तब तक पकाएं जब तक मिश्रण गाढ़ा ना हो जाए ओर चावल सीज ना जाए । बीच बीच मे चलाते रहे और ध्यान रखें कि यह पैन के निचले हिस्से मे चिपके नही। 
  • गुड़ डालें और इसे पिघलने दें और नारियल-चावल के मिश्रण मे अच्छी तरह से मिलाएं। बीच बीच मे चलते रहे।
  • एक बार जब यह अच्छी तरह से मिल जाए तो दूध और इलायची डालकर अच्छी तरह मिलाएँ।
  • आंच बंद कर दें।
  • एक छोटे पैन में घी गर्म करें और काजू और किशमिश को भूनें ओर खीर में डाले।नैवेद्यम चढाने के बाद गरम या ठंडी खीर का आनंद लें।

 

ध्यान दें:

  • आप रेडीमेड नारियल के दूध का उपयोग कर सकते हैं या 1 / 2 कप नियमित दूध का उपयोग भी कर सकते हैं।
  • अगर खीर गाढी हो जाए तो थोड़ा दूध डाले।
