Aam + Shrikhand =Amrakhand

Amrakhand is a very popular dessert of Maharashtra, Gujarat and North India. This light yellow colored dessert is very rich and creamy in texture. Though Amrakhand is a seasonal dessert made during mango season, Amrakhand lovers can make it any time because packed mango pulp is always available in the market. Many people enjoy this rich creamy soft exotic Amrakhand with fried puries or methi ka paratha but mostly it is served as a dessert after lunch or dinner.

Ingredients for 5 – 6 servings:

2 cup Hung curd  
1 cup Mango pulp 
1 cup Chopped mango 
3/4 cup bura 

Amrakhand Ingredients

Preparation to make Amrakhand

  • To make Amrakhand I prefer home made hung curd and to make hung card you need nice thick and creamy curd made with full cream milk.
  • To make hung curd (dahi ka chakka) at home, I made curd with one litre full cream milk.
  • With one litre milk you get approximately 2 cup hung curd.
  • To make hung curd, take a muslin cloth, put curd in the center and tie it tightly.
  • Keep strainer on a bowl and keep tied curd on it, and keep this in refrigerator so that curd remains fresh. If kept outside, curd may turn sour and spoil the taste, the whey will be collected in the bowl.
  • After 3 or 4 hours, hung curd will be ready.  Transfer it into a bowl,
  • Wash mangoes, peel and chop them. Blend and make smooth puree.
  • Take 1 or 2 mangoes, peel and chop into small cubes and keep aside for garnishing.
  • Use sweet mangoes so quantity of sugar can be reduced in the dish.  I used dashehari mango to make puree and for garnishing.
  • Instead of normal sugar I used bura (dry, grainy powdered sugar) because sugar extracts water and this will spoil the texture.

Method

  • Take hung curd, mango puree and bura in a strainer and sieve the mixture through it, you will get fluffy, creamy and soft mixture.

  • Add some chopped mango pieces in it and mix.
  • Dish out Amrakhand in a serving bowl and garnish with mango pieces.
  • Delicious exotic Amrakhand is ready.
  • Keep in the refrigerator and serve chilled.

Note:

Whey is very nutritional so use it to knead flour for rotis, maida for bhatura or add whey to dal, sabzis, buttermilk, etc.

 आम्रखंड

आम + श्रीखंड = आम्रखंड

आम्रखंड महाराष्ट्र, गुजरात और उत्तर भारत की एक बहुत ही लोकप्रिय मिठाई है। हल्के पीले रंग की यह मिठाई  बहुत स्वादिष्ट और जायकेदार होती है।हालांकि आम्रखंड आम के मौसम के दौरान बनाई जाने वाली एक मौसमी मिठाई है, फिर भी आम्रखंड के प्रेमी इसे कभी भी बना सकते हैं क्योंकि पैक्ड आम का गूदा बाजार में पूरे साल मिलता है। बहुत से लोग तली हुई पूरियों या मेथी के पराठो के साथ इस जायकेदार और स्वादिष्ट आम्रखंड का आनंद लेते हैं। लेकिन ज्यादातर इसे दोपहर या रात के खाने के बाद मिठाई के रूप में परोसा जाता है।

सामग्री (5 – 6 servings)  :

  • 2 कप दही का चक्का
  • 1 कप आम का गूदा
  • 1 कप कटे हुए आम के क्यूब्स 
  • 1 कप बूरा

 आम्रखंड बनाने की तैयारी

  • आम्रखंड बनाने के लिए, मैं हमेशा घर का बना ताजे दही का चक्का पसंद करती हूँ।
  • घर पर दही का चक्का बनाने के लिए एक लीटर फुल क्रीम दूध से दही जमा लो।
  • एक लीटर दूध के साथ आपको लगभग 2 कप गाढा दही मिलता है।
  • दही तैयार हो जाने के बाद, एक मलमल का कपड़ा लें और उसमें दही स्थानांतरित करें और इसे कसकर बांध लें।
  • एक कटोरे के ऊपर छलनी रखें और उस पर बंधा हुई दही रखें, और इसे फ्रिज में रखें ताकि दही ताजा रहे। यदि बाहर रखा जाता है, तो दही खट्टा हो सकता है और  आम्रखंड का स्वाद खराब कर सकता है, मट्ठा कटोरे में एकत्र हो जाएगा।
  • 3 या 4 घंटे के बाद,दही का चक्का तैयार हो जाएगा। इसे एक कटोरे में स्थानांतरित करें,
  • आम को धो लें, छील लें और काट लें। ब्लेंड करें और स्मूथ प्यूरी बनाएं।
  • 1 या 2 आम लें, छील लें और छोटे क्यूब्स में काट लें और गार्निशिंग के लिए अलग रख दें।
  • मीठे आम का उपयोग करें ताकि  आम्रखंड में चीनी की मात्रा को  कम कर सके। मैंने प्यूरी बनाने के लिए और गार्निशिंग के लिए दशहरी आम का उपयोग किया है।
  • सामान्य चीनी के बजाय मैंने बूरा का इस्तेमाल किया है।

बनाने का तरीका

  • एक छलनी में  दही का चक्का, आम की प्यूरी और बूरा लें और छलनी से मिश्रण को छानले,  नरम और चिकना मिश्रण तैयार हो जाएगा।
  • इसमें कुछ कटे हुए आम के टुकड़े डालें और मिलाएं।
  • आम्रखंड को एक सर्विंग बाउल में निकाल लें और आम के टुकड़ों से गार्निश करें।
  • स्वादिष्ट आम्रखंड तैयार है।
  • फ्रिज में रखें और ठंडा परोसें।

ध्यान दें:

मट्ठा बहुत ही पौष्टिक होता है इसलिए इसे रोटियों के लिए आटा, भटूरे के लिए मैदा या दाल, सब्जी, छाछ आदि में मिलाएं।

  1. Good recipe. I love shrikhand and amrakhand even more! The tip about burra is excellent. But we use sour curd for the dish as it gives it a khatta-meetha taste to it. We got the hung curd (it was called chakka) in milk dairies in Nagpur when I was a kid 🙂

    Even I love Amrakhand, here we don’t get chakka,.but in MP chakka is available in market.
